Two of our favorite snacks together: S’mores Muddy Buddies!
Celebrate National S’mores Day! S’mores are a summertime must, so when National S’mores Day rolls around (August 10th – to be exact) we have to celebrate. You can never go wrong with good old classic s’more, but I’m all about taking that amazing flavor trio and mixing it up. We have shared so much s’mores goodness here over the years including the s’mores dip, indoor s’mores 3 ways and a full roundup of everything s’mores. I don’t think we will ever tire of that classic, so we’re celebrating the holiday with S’mores Muddy Buddies!
Here’s a tip…do you ever have marshmallows that get a little hard? They’re perfect for this recipe! The extra chewy crunch once they’re toasted is the perfect addition to this snack.
S'mores Muddy Buddies
Muddy Buddies with the added bonus of the flavor of s'mores!
- 9 cups Rice Chex cereal you can substitute with Golden Grahams
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter
- 1/4 cup butter or margarine
- 1 teaspoon vanilla
- 4 cups mini marshmallows toasted
- 3 graham crackers broken into small pieces
- 2 Hershey chocolate bars broken into chunks
- 1 1/2 cups powdered sugar
Using your oven's broiler, toast the mini marshmallows. Rotate the marshmallows and broil on another side. Keep a close watch and remove from the broiler as soon as they turn a golden brown.
Into a large bowl, measure the cereal and set it aside. In a big glass - microwavable bowl, microwave the chocolate chips, peanut butter and butter uncovered on High for 1 1/2 minutes until mixture can be stirred smooth. Stir in vanilla.
Pour the mixture over the cereal and a little more than half of the toasted marshmallows, stirring until both the cereal and the marshmallows are evenly coated.
In a new big glass bowl, toss the coated mixture into the powdered sugar. Serve with a few uncoated toasted mini marshmallows, small broken pieces of graham cracker and small pieces of a Hershey Chocolate bars. Store in an airtight container in the fridge.
