Easy Pumpkin Ice Cream Sandwiches
Here’s a fun fall treat – semi-homemade ice cream sandwiches…Pumpkin ice cream sandwiches! Who says Ice cream sandwiches are just for Summer? Pumpkin ice cream sandwiches for Fall are an easy way to get your pumpkin spice fix.
They taste like pumpkin pie without having to warm up your oven. To make them, this is what you’ll need:
– your favorite brand of pumpkin ice cream
– thin crisp cookies – Cinnamon or Ginger flavor work great!
You can find these kind of thin cookies at stores like Trader Joes or Ikea. I’m pretty sure Walmart and Target sell similar type of cookies too. When you start to spot pumpkin ice cream at the stores, you’ll have to pick some up along with these thin cookies to make these at home.

Seriously. I think I need to take a bath in that pumpkin ice cream! I absolutely adore pumpkin things! I have GOT to find some and make these sandwiches! It's like my cream cheese on a graham cracker shortcut when I'm craving cheesecake, but don't want to spend the time making it!

We love Anna's cookies and always pick up a few packages of the almond ones at Ikea and stock up on the ginger ones at Costco. Thanks for giving me another way to enjoy them–and another way to enjoy pumpkin since I'm not a big fan of pumpkin pie. 🙂
