These creamy dill smoked salmon cucumber bites are always a hit and are the first to go.
We love party food! Lots of little tasty bites that are easy to whip up and you can sample it all. A good no bake or no cook appetizer is a must, especially when it’s hot outside. You can prep the dip for these a day ahead and quickly assemble them right before your party starts!
We love the look of cucumber rounds with just a few sides peeled. Peeling them this way you can still see the green. The creamy dill has prepared horseradish sauce mixed into it. If you like it more spicy you can always add horseradish sauce. Have you tried the mini cucumbers from Costco? They are so good! The texture is so crunchy without a super thick skin. If you can’t find them or you don’t shop at Costco, English cucumbers are a great option as well.

Smoked Salmon Cucumber Bites
Ingredients
- mini cucumbers Costco sells them in a big bag
- 1 lb. smoked salmon flaked off into bite sized pieces
- 8 oz. package cream cheese softened
- 3 tbl. fresh dill chopped
- 2 tbl. creamy horseradish prepared
- mini wooden party forks
Instructions

Prepare the creamy dill spread: With a hand mixer, mix together the softened cream cheese, horseradish and chopped dill until well combined. Cover bowl with plastic wrap and store in the fridge until ready to assemble.

Peel three stripes on the cucumbers to still show the green. Slice the cucumbers 1/2 inch in thickness. Set them out onto your serving dish.

Spread teaspoon of cream cheese on top of each cucumber round. Top each cucumber round with a bite size piece of smoked salmon. Garnish with a little more fresh dill and serve with the tiny wooden party forks.
