These creamy dill smoked salmon cucumber bites are always a hit and are the first to go.
We love party food! Lots of little tasty bites that are easy to whip up and you can sample it all. A good no bake or no cook appetizer is a must, especially when it’s hot outside. You can prep the dip for these a day ahead and quickly assemble them right before your party starts!
What you need for Smoked Salmon Cucumber Bites:
- mini cucumbers
- smoked salmon
- cream cheese
- fresh dill
- creamy horseradish
- mini wooden party forks (for serving)
How to make Smoked Salmon Cucumber Bites:
- Prepare the creamy dill spread: With a hand mixer, mix together the softened cream cheese, horseradish and chopped dill until well combined. Cover bowl with plastic wrap and store in the fridge until ready to assemble.
- Prepare cucumbers: Peel three stripes on the cucumbers to still show the green. Slice the cucumbers 1/2 inch in thickness. Set them out onto your serving dish.
- Assemble: Spread teaspoon of cream cheese on top of each cucumber round. Top each cucumber round with a bite size piece of smoked salmon. Garnish with a little more fresh dill and serve with the tiny wooden party forks.
How to store Smoked Salmon Cucumber Bites:
Keep these cucumber bites stored covered and cooled in the fridge. They will last around two days after you prepare them!
Fun way to cut a cucumber:
We love the look of cucumber rounds with just a few sides peeled. Peeling them this way you can still see the green. Have you tried the mini cucumbers from Costco? They are so good! The texture is so crunchy without a super thick skin. If you can’t find them or you don’t shop at Costco, English cucumbers are a great option as well.
Delicious Homemade Horseradish Sauce:
The creamy dill spread has prepared horseradish sauce mixed into it. We love to use our simple and tasty homemade version. If you like it more spicy you can always just add more horseradish!
Smoked salmon with cucumber:
Are you a smoked salmon fan? It’s so easy to have on hand and packed with flavor. It pairs so perfectly with the fresh cucumber in this recipe. We love smoked salmon cucumber toast too! I could pretty much have it on anything, it’s so good!
