Homemade Toffee Recipe
Candy making can feel intimidating, especially when a candy thermometer is needed. This recipe for homemade toffee candy is so simple and so delicious and the good news…no candy thermometer required! You just stir and stir and stir…watch as it turns a golden caramel color and then take it off the heat and quickly pour it into the prepared pie plates to set.
What are the ingredients for Homemade Toffee Candy?
- 2 sticks butter, salted
- 3 tablespoons water
- 1 cup sugar
- 1/4 cup Chopped almonds, roasted and salted (optional)
- 1/2 cup whole almonds, salted and roasted (more if desired)
- 1 1/2 cup Guittard Milk Chocolate Chips (THE BEST!!)
How to make Homemade Toffee Candy
Butter two 9-inch pie plates (or for a thicker toffee use one 10-inch pie plate). You could also line the pie plates with parchment paper for a non stick solution.
Divide the whole almonds between the two prepared pie plates. Place the whole almonds on the buttered pie plates, spaced apart from each other.
In a heavy duty saucepan, add the butter, water and sugar. Cook on HIGH heat, stirring constantly until mixture comes to a boil (it will start to become frothy). Continue stirring until mixture turns the light brown.
Remove from the heat and immediately pour it into the buttered pie plates.
Sprinkle with the chocolate chips. Let set for a couple of minutes, the heat from the candy will melt the chocolate. Gently spread the melted chocolate with a rubber spatula. Sprinkle with chopped almonds (if desired).
Let the chocolate set, up to two hours or overnight.
Store the candy in an air tight container at room temperature.
*This recipe for homemade toffee freezes great too! After frozen you will need to let it thaw at room temperature for 30 minutes or more before eating.

I got impatient waiting for the chocolate to set, and as you can see in the photo below, you can see that the toffee lightened a lot in color after being in the freezer. This recipe freezes great. We love to make a double batch and freeze half for later!

What kind of nuts should you use to make homemade toffee candy?
-We used roasted salted whole almonds. We keep some whole inside the candy and chop up about 1/4 cup of the almonds to sprinkle some on top of the melted chocolate before it’s set. Pecans would also be delicious. Or you can keep the nuts out if that is what you prefer.
