This recipe is a copy cat recipe for Bajio’s green chile chicken quesadilla.
Whether it’s the green chile chicken salad or the quesadilla, once you’ve made the green chile chutney, it’s up to you on what you’d like to make. Both the salad and the quesadilla are so good!
How to make Easy Guacamole for Quesadillas
-1 avocado mashed
-2 tablespoons store bought green sauce
Mix the avocado and green sauce together.
Green Chile Chicken Quesadilla
We love this recipe for the Green Chile Chicken Quesadilla just like the one served at Bajio Mexican Restaurant.
- 1 chicken breast grilled and sliced
- 1/2 cup Green Chile Chutney
- 1/2 cup caramelized onions
- 1 cup shredded cheese mexican blend
- 1 large flour tortilla
In a large skillet, cook or if cooked warm your tortilla on both sides.
Sprinkle a big handful of cheese onto the cooked tortilla.
In a separate small skillet on medium heat, mix together the green chili chutney, shredded chicken and caramelized onions.
As the cheese melts, add the chicken, chutney and onion mixture onto one half of the tortilla. Fold half the tortilla over onto itself. Remove from pan and slice.
Serve with guacamole and sour cream.
