It’s officially pumpkin season! What’s better than delicious homemade pumpkin chocolate chip cookies? Pumpkin chocolate chip cookies you can make in less than 20 minutes or so. I know, right?!… pretty awesome, huh? These cookies are so moist and delicious. I’m certain they’ll be a crowd-pleaser with your family and friends this Fall season!
The simplicity of these cookies make them a great neighbor treat or go-to cookie for those busy or “I forgot a treat for the Fall social” days. Plus there’s only 5 ingredients in these cookies, and most of the ingredients are probably ingredients you have on hand. …And if you don’t have them on hand now, you’ll always want them on hand to make them again and again. They’re so good!
The 5 ingredients you will need are:
-spice cake mix
-can of pumpkin (not canned pumpkin pie filling, you just need pure pumpkin)
I have the full recipe below.
- 1 spice cake mix
- 1 can (15 oz) pure pumpkin
- 1 egg
- 1 teaspoon vanilla
- ¾ cup chocolate chips (We like to use mini chocolate chips if we're making bite-size cookies)
- Preheat oven to 375 degrees. Mix the first 4 ingredients (cake mix, pumpkin, egg and vanilla) together. Once combine mix in the mini chocolate chips until evenly distributed. The dough will be very sticky and soft. Spoon or scoop 1 inch balls and place on a cookie sheet lined with a silicone baking mat or parchment paper. Bake for 10 minutes or until the cookie springs back when touched.
