Here’s a great little recipe to put all those garden fresh cucumbers to good use. It’s an old fashioned recipe that reminds me of my Grandma Kae whenever I make it. She always makes it in the summer. It really goes with everything.
Quick and Easy Cucumber Salad
This recipe is so simple. It’s even more fast when you use a mandolin to slice the cucumber for even uniform slices. We love this ceramic handheld mandolin. Please use it with caution(!!), it’s so very sharp. You can also slice up the cucumber and onion with a kitchen knife, we just love the look of the thin uniform cuts from the mandolin. We love English style cucumbers in this recipe, but you can use whatever kind of cucumber you have. The vinegar dressing really sweetens up both the cucumbers and the onions.
How to Sweat Cucumbers
This recipe calls for sweating the cucumbers, which is basically a method of adding salt to the cucumber slices which makes the cucumbers release some of their liquid which you can discard. This step is not completely necessary, but it does help take out some of the excess liquid.
What to serve with Cucumber Salad?
Cucumber Side Dish
We love this simple Cucumber Salad, especially when cucumbers are fresh from the garden.
- 3 large cucumbers
- 1 teaspoon salt
- 1/4 cup white sugar
- 1/8 cup water
- 1/4 cup distilled white vinegar
- 1/2 teaspoon celery seed
- 1/4 cup onion sliced
Slice the cucumbers really thin.
Sprinkle them with salt. Let stand 30 minutes.
In a medium size bowl mix sugar, water, vinegar, celery seed, and onion.
Add cucumbers to the mixture and toss them around. Refrigerate for at least 1 hour. Served chilled.
