A fun spin on classic Chicken Parmesan…make Chicken Parm Meatballs!
I love to take a recipe we know and love and put a fun spin on it. Take a tried and true like chicken parm…and jazz it up meatball style! We’re big fans of meatballs around here, from Swedish meatballs to porcupine meatballs we’re trying to cover all the bases. These chicken parmesan meatballs are so good! Serve them over spaghetti or just loads of your favorite spaghetti sauce and it’s a dinner my whole family loved, and I think yours will too.
I don’t buy ground chicken often enough, but it’s such a healthier option to ground beef. Here’s the ingredient lineup with the full easy print recipe below.
Here’s where the messy part comes in…you’ll want to mix all of this up really good with your hands.
I love my ice cream scoop for scooping out uniform sized meatballs.
You will mix up some olive oil and your favorite spaghetti sauce and brush each meatball with this mixture, and then bake!
Here they are hot out of the oven.
Top with mozzarella cheese and more sauce and you can melt the cheese under the broiler for a minute or two.
Chicken Parmesan Meatballs
Make Chicken Parmesan Meatballs to feed a crowd on Italian Night!
- 2 pounds ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup onions diced fine
- 1 tablespoon parsley chopped
- 1/2 cup parmesan cheese
- 1 egg whisked
- a little lemon zest
- 1 clove garlic minced
- salt and pepper to taste
- 3 tablespoons olive oil
- 1 14 ounce can pizza sauce
- 1 package mozzarella grated
Preheat your oven to 400.
In a large bowl, gently mix together (with your hands) the first 10 ingredients.
With an ice cream scoop, scoop out uniform meatballs and place on a sheet pan lined with tin foil.
In a small glass bowl, mix together a spoonful of the pizza sauce with the olive oil. Brush this mixture onto of each meatball.
Bake for 15 minutes.
Alternate cooking method would be to brown the meatballs in a large frying pan on medium high heat on your stove top rotating all meatballs to brown on all sides and then bake for 8 - 10 minutes until completely cooked through.
Remove meatballs from the oven, spoon more sauce over each meatball, and cover each one with a sprinkle of mozzarella cheese. Broil for 2 - 3 minutes just until cheese melts and bubbles. Serve warm.
