The best little breakfast bagel I ever did have.
Breakfast Bagel Sandwich
2 scrambled eggs – We used our Bullet blender with a little milk to get them fluffy
1 ripe avocado sliced
1 ripe tomato sliced
1 slice of cheese (swiss or provolone would be great here)
1 big soft bagel toasted (with poppyseeds, onions, asiago cheese – what ever you love!)
Aioli spread (which is basically fancy mayo with pressed garlic, lime juice, salt and pepper – which is SO easy to make at home)
Once you have everything ready to go: sliced, scrambled and cooked, you can assemble your big delicious breakfast bagel sandwich. I guess the one thing giving it the “breakfast” name is the scrambled eggs. Otherwise it would just be a sandwich on a bagel. Either way…it’s so good. I almost didn’t get a picture of it, before I ate it all.

Looks delicious! I’m normally a sweet breakfast person all the way, but this might cause me to change my tune. I’m also always game for a good breakfast burrito. Andy and I had an amazing one when we were on vacation that we’ve tried to recreate as well. The secret is baked beans – the perfect combo of sweet and savory.
Breakfast bagels are the best! Asking me to choose a favorite breakfast is like asking me to choose a favorite star in the sky. Sweet, savory, I love it all.

I’m not much of a breakfast person, but I’m trying. I’m savory all the way. I don’t like to start my day too sweet.
My better half is a total breakfast person. I schedule one night a week just for breakfast foods so this recipe will definitely make it into our rotation.

Going to try the sandwich this Sat. when our son & 22 month old granddaughter visit. He’s a fitness trainer & will love this healthy start to the day.
My favorite breakfast is waffles or my Strawberry Pie. I take a slice of favorite bread & toast it. Put 1/2 cup cottage cheese on top. Slice 6 strawberries. Put one layer on the cottage cheese and the remaining I mash up with a little Truvia & plop it on top. MMM! Fast, easy, healthy & yummy! So I guess I like sweet for breakfast:)
