Spinach Cheese Shells

Feed the family with these delicious Spinach Cheese Shells for Italian Night.

Ingredients
  • 24 jumbo shells
  • 2 eggs beaten
  • 2 cups ricotta cheese
  • 2 cups cottage cheese
  • 1 cup parmesan cheese
  • 2 cups grated mozzarella cheese
  • 1 1/2 cups chopped fresh spinach
  • 1 tablespoon dry parsley
  • 2 teaspoons salt
  • 1 teaspoons pepper
  • 1 large jar marinara sauce of your choice.
Instructions
  1. Cook the shells according to directions on the package.  Make sure to salt the water! It's also a good idea to cook them al dente (a little under cooked), so they hold their shape.

  2. Mix together the following: eggs, ricotta cheese, cottage cheese, parmesan cheese, mozzarella cheese, spinach, parsley, salt and pepper.

  3. Fill the cooked shells with cheese mixture. Pour a thin layer of marinara sauce in a 9X13 inch glass baking dish. Place filled shells into the baking dish. Top with marinara sauce and parmesan cheese. Bake at 350 degrees for 30 minutes until it's bubbly.
