Green Velvet Cake…just like red velvet…only GREEN!
Just in case you never got your Red Velvet cake fix during the month of February, no worries…with a simple switch up in the colors, you can swap your red for green and enjoy a delicious “green velvet” cake!
Frosting with Milk and Flour:
This frosting goes by a bunch of different names like:
- boiled milk frosting
- cloud burst frosting
- roux frosting
- ermine frosting
- heritage frosting
- mock buttercream
- gravy frosting
- cooked flour frosting
Why do people still make boiled milk frosting?
One of the reasons we still love this frosting, is because it is so white! This frosting with the plain white crisco and the milk makes it very white in color. It looks so good with red velvet or green velvet in this case. Plus it’s so delicious!
What if I don’t have Cake Flour? You can make it!
If you don’t have cake flour, you can make it. After measuring out the 2 cups of flour needed for this recipe, remove 2 tablespoons of the flour and add 2 tablespoons cornstarch in the place of the flour. Now sift the flour and corn starch together. Now you have cake flour. So easy!
Best Food Coloring for Green Velvet Cake or Red Velvet Cake:
We love Wilton brand Gel colors. They are great for giving bright colors without thinning the batter. Both Michaels and Walmart sell Wilton brand Gel Colors.
Green Velvet Cake
Just like red velvet cake, only green...GREEN VELVET Cake!
Ingredients
For the Cake Batter:
- 1/2 cup shortening
- 1 1/2 cups white sugar
- 2 eggs
- 2 tablespoons cocoa powder
- green food coloring gel (wilton brand)
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 2 1/2 cups cake flour sifted
- 1 1/2 teaspoons baking soda
- 1 tablespoon distilled white vinegar
For the Cake Frosting:
- 10 tablespoons all-purpose flour
- 2 cups milk
- 1 cup butter room temperature
- 1 cup crisco (not butter flavored)
- 2 cups white sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon fine sea salt
Instructions
For the Cake:

Preheat oven to 350. Grease two 9-inch round pans.

In a stand mixer: beat shortening and sugar together until light and fluffy.

Add eggs one at a time and beat well after adding each one.

Add in the salt, vanilla, buttermilk, sifted flour and cocoa powder to the batter.

Add in the green food coloring gel to the creamed mixture. Add in the desired amount of food coloring gel until the right color green is achieved.

Mix baking soda and vinegar together, then gently fold it into the cake batter. Only stir the batter after this step.

Pour the batter into the prepared pans. Bake in preheated oven until a tester inserted into the cake comes out clean, about 30 minutes. Cool the cakes completely on a wire rack.
For the Cake Frosting:

In a saucepan cook the milk over low heat. Add in the flour and mix together until thick. Stirring constantly. Let the milk flour mixture cool completely.

While mixture is cooling, beat sugar, crisco, butter, salt and vanilla until light and fluffy. Add in cooled milk flour mixture in and beat until frosting is spreadable. When the cake is completely cooled, frost the cake layers.

Decorate for St. Patrick's Day: Add a little sugar and green food coloring together and free hand a shamrock on top of the cake for a cute decoration.
Recipe Notes
To make a three layer cake: increase cake batter ingredients by 1/2.

- Sift dry ingredients together.
- Let the cake cool completely before frosting it.
