Oh how we love you, Cafe Rio. Sometimes it’s fun to make Cafe Rio at home, and this copy cat Cafe Rio chicken is so dang close to the real thing! Plus it’s made in your crock pot and comes out so tender and juicy. Any chance we can use our crock pot is a plus, especially when it’s hot outside.
The recipe is so simple! Here’s the secret ingredient to get the most tender chicken: Zesty Lime Vinaigrette Dressing. It gives it such great flavor!

Crock Pot Cafe Rio Chicken
- 4-6 chicken breasts boneless + skinless
- 1 Bottle Zesty Lime Vinaigrette Dressing
- 1 1/2 Tablespoon Cumin
- 1 Tablespoon Chili Powder
- 1 teaspoon minced garlic about 2 - 3 cloves
Put the uncooked chicken breasts in the crock pot. Pour the full bottle of salad dressing over the chicken. Sprinkle the rest of the ingredients over the top and mix them in a bit with a spoon.
Cover your crock pot with the lid and cook on high for 4 hours.
Remove all the chicken breasts from the crock pot and let cool.
Shred the chicken breasts and move to a glass bowl.
Pour most of the liquid over the shredded chicken.
Serve the chicken warm in a burrito, a burrito bowl, a salad or in an enchilada.

The chicken comes out so good! Pull the chicken out to cool and once cool, you can shred it with two forks. Move all the shredded chicken to a glass bowl and pour most all the crock pot sauce all over the top to keep the shredded chicken moist.
How you use the chicken is up to you! You could make a burrito or a burrito bowl.
Either way you can’t go wrong! It also makes great leftovers for lunch the next day.
