When peaches are in season here in Utah… it’s THE best season!
One of our favorite places to buy peaches in Utah, is in Brigham City. Along the main highway, you can find an entire row of amazing fresh fruit stands. Every Summer my mom always makes a trip to Brigham City to buy a big box of peaches.
I love this giant metal peach outside the fresh fruit stands. I love the pride they take in their amazing fresh peaches.
Under the tent, you’ll find baskets and baskets of fresh peaches…so good!
I thought this was neat to see, a peach that had been stung by a bee. All the sugars crystalized outside of the peach.
Now for the fun part…the recipe. Waffles are all the rage right now, especially waffle trucks. With fresh peaches, you can make the best waffles right at home.
Easy Waffle recipe ingredients:
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 2 large eggs
- 1/2 cup butter melted
- 1 1/2 cups milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon *optional
How to make these Easy Waffles:
- Warm up your waffle iron.
- In a large mixing bowl, mix to combine the: flour, baking powder, salt and sugar.
- Add in the eggs, melted butter, milk and vanilla extract. Add in the ground cinnamon at this time too if desired. Stir well until
- combined.
- Spray the warmed waffle iron with nonstick cooking spray.
- Scoop about 1/2 cup of waffle batter and pour it into the warmed waffle iron.
- Cook until lightly golden brown.
- Serve warm with syrup, fresh berries or fruit, and whipped cream if desired. Enjoy!
- After you make our favorite waffle recipe (see recipe below), while the waffle is still warm, top with fresh sliced peaches, (and fresh blueberries too if you’d like) a tablespoon of brown sugar, and fresh cream. That’s it! So so simple, and so so good. You could definitely serve this for dessert or breakfast for dinner!
Can I make waffles ahead?
Yes! Depending on how many waffle irons you have, which chances are you probably just have one. When it comes to feeding a crowd, no one wants to have to wait for each waffle to cook. So make a batch or two a day ahead. Precooked waffles warm up great on the waffle iron. They crisp up nicely on the hot waffle iron too. You can keep the cooked waffles in the fridge until ready to use or you can freeze them.
Can you use canned peaches for Peaches and Cream Waffles?
Although canned peaches are just not as good as fresh peaches, they are a distant second to the peaches and cream flavor combination we all love. If you LOVE peaches and you’d like to enjoy these waffles when peaches are not season, you can totally use canned peaches.

Recipe Notes
*Determine the style of waffle iron you are using. For a Belgian style waffle maker you will use about a 1/2 cup of batter. For an American style waffle maker you will use less batter. The amount of batter will vary based on the style of waffle iron you are using.

I have three recipes I like but this is my favorite. I’ve even made it for a Bridal Shower Brunch.
Country Breakfast Casserole
2 (12 oz.) pkg. frozen hot pork sausage, thawed
1 (2lb.) pkg. frozen southern-style hash brown potatoes
1 cup minced onion
2 cups milk
8 oz. pkg. shredded Colby-Jack cheese (5 cups) divided
1/2 tsp. salt
7 eggs, slightly beaten
1 (12 oz.) carton salsa
Grease 9×13 inch glass baking dish. In medium skillet brown sausage; drain. In large bowl combine sausage, hash browns, onion, milk, 3 cups of the cheese, salt & eggs. Pour mixture into greased baking dish. Top with remaining 1 cup cheese. Refrigerate, covered several hours or overnight. Bake at 350 degrees, uncovered, until knife inserted near center comes out clean (50-55 minutes). Let stand 10 minutes, covered. Cut into squares and serve warm with salsa. 8-10 servings.
