Blender tortilla soup

Happy Monday!

I’m a big fan of World Market, and not just for their home decor: inside and out. They also have a great gourmet food section. I love virtually shopping with people, so I thought it would be fun to show you some fun foodie items I loved at World Market.

I was shopping hungry again (I hate when I do that!), and craving mexican food. From cookbooks to dips, mixes and chips; you can find a bunch of fun things. If you pick a favorite food type (Italian – Southwest – Asian inspired), you can always find something at World Market.

I loved this great drink dispenser with the giant cork top. Or these great cast iron pans or even blood orange juice.

I came home with this delicious guacamole mix and queso dip and two bags of chips that looked fun to try. We go through so much chips and salsa at our house, so I’m always up to try out some new types of dip, and these did not disappoint.

We had a little Southwest inspired dinner the other night, and the chips and dips went along great with this super easy Tortilla Soup.

I love gathering all the ingredients before I start cooking. Do you do this too?

Blender Tortilla Soup

Ingredients
2 cups diced tomatoes (canned whole works here too)
1 onion, cut into chunks
1/2 cup cilantro, packed
1 tbsp canned chipotle peppers in adobo sauce
4 cups chicken broth
1 cooked and shredded chicken breast (rotisserie chicken breast works great here too)
1 lime, juiced

- tortilla chips
- Guacamole

Directions:
Blend the tomatoes, onion, cilantro and chipotle peppers together in a blender or food processor. Add a small amount of chicken broth and blend everything until smooth. Transfer to a saucepan and stir in the remaining chicken broth. Bring to a boil over medium-high heat.

Add in the chicken breast and continue to simmer for 5 to 7 minutes. Remove from heat and stir in the lime juice right before serving.

To serve, add a few tortilla chips into each bowl and ladle the soup over the top. Top with a spoon full of the World Market guacamole and a little fresh cilantro.
