Easy salty sweet chunky granola.
In a small saucepan heat the oil, honey and vanilla until the honey melts and is easy to stir.
Gently spread the mixture out evenly on the pan.
Every 10 minutes take the pan out of the oven and gently stir it around to ensure all pieces are coated with the oil/honey and so that it all toast evenly.
Remove from the oven after 40 minutes of baking and let it cool on the pan.
When cooled to room temperature break into smaller pieces.
