We love this recipe for the Green Chile Chicken Quesadilla just like the one served at Bajio Mexican Restaurant.
Sprinkle a big handful of cheese onto the cooked tortilla.
In a separate small skillet on medium heat, mix together the green chili chutney, shredded chicken and caramelized onions.
As the cheese melts, add the chicken, chutney and onion mixture onto one half of the tortilla. Fold half the tortilla over onto itself. Remove from pan and slice.
Serve with guacamole and sour cream.
