Chicken Parmesan Meatballs

Make Chicken Parmesan Meatballs to feed a crowd on Italian Night!

  • 2 pounds ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup onions diced fine
  • 1 tablespoon parsley chopped
  • 1/2 cup parmesan cheese
  • 1 egg whisked
  • a little lemon zest
  • 1 clove garlic minced
  • salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 14 ounce can pizza sauce
  • 1 package mozzarella grated


  1. Preheat your oven to 400.
  2. In a large bowl, gently mix together (with your hands) the first 10 ingredients.
  3. With an ice cream scoop, scoop out uniform meatballs and place on a sheet pan lined with tin foil.
  4. In a small glass bowl, mix together a spoonful of the pizza sauce with the olive oil. Brush this mixture onto of each meatball.
  5. Bake for 15 minutes.
  6. Alternate cooking method would be to brown the meatballs in a large frying pan on medium high heat on your stove top rotating all meatballs to brown on all sides and then bake for 8 - 10 minutes until completely cooked through.
  7. Remove meatballs from the oven, spoon more sauce over each meatball, and cover each one with a sprinkle of mozzarella cheese. Broil for 2 - 3 minutes just until cheese melts and bubbles. Serve warm.
