Three Cheese Candy Corn Quesadilla

The ultimate cheese and chicken quesadilla with three different cheeses melted on the outside to look like a candy corn candy. These are fun to make in the Fall and before Halloween.

  • cooked rotisserie chicken shredded
  • 1 small can green chiles chopped
  • 1/2 cup green salsa
  • tortillas cooked
  • 1 small block mild cheddar cheese sliced
  • 1 small block cheddar cheese sharp to medium, sliced
  • 1 small block Monterey Jack cheese sliced
  1. In a big pan combine the cooked shredded chicken, chopped green chiles and green salsa. Warm through and mix together.
  2. On a cooked tortilla add two big spoonfuls of the chicken mixture to one half of the tortilla and fold one half of the tortilla over.
  3. Cut the tortilla into three triangles.
  4. Place all the quesadilla triangles onto a sheet pan.
  5. Turn your oven broiler on to high.
  6. Top each quesadilla triangle with the three cheeses to look like the colors of a candy corn.
  7. When each triangle is completely covered in the cheeses, place the pan under the broiler for a few minutes until the cheese is melted and bubbling.
  8. Remove from the oven and serve warm.
