For the Eclair Crust:

  • 1 stick butter (1/2 cup)...do not use margarine
  • 1 cup water
  • 1 1/4 cups all purpose flour
  • 4 eggs beaten
  • 1 pinch salt

For the Cream Filling:

  • 4oz. cream cheese
  • 2 tbsp milk
  • 1 large package Vanilla Pudding
  • 1 1/2 cup Milk
  • 8oz. package Cool Whip

For Serving:

  • Chocolate Syrup
  • Fresh Berries

For the eclair base:

  1. Preheat your oven to 400.

  2. Bring to a boil the butter and water.
  3. Once it starts to boil, take it off the heat and add the flour and a pinch of salt. Mix in the flour with a wooden spoon until the mixture becomes smooth. Leave it to cool for a few minutes - don’t let it cool completely as the dough will be lumpy.

  4. Whisk in the eggs.

  5. Spread onto a greased sheet pan.

  6. Bake for 25 minutes until puffy, and then let cool.

For the vanilla cream filling:

  1. With a hand mixer, beat together the cream cheese with the milk.

  2. In a separate bowl mix together the vanilla pudding with the milk

  3. Combine both mixtures together until thickened.

  4. Fold in the Cool Whip

  5. Spread mixture over the top of the crust.
  6. Refrigerate.
  7. Serve with a drizzle of chocolate syrup and fresh sliced berries.
