Light and fluffy blackberry fool: The perfect dessert for a late summer day.

Ingredients
  • 1 teaspoon vanilla extract
  • 2 6oz. packages Blackberries
  • 1 cup sugar, divided
  • 1 1/2 cup heavy cream
  • 1 cup vanilla Greek Yogurt
  • fresh mint leaves
Instructions
  1. Zest and juice the lemon, make sure to strain out all the lemon seeds.

  2. In a medium sized saucepan add one package of blackberries, lemon juice and lemon zest and 1/2 cup sugar. Bring to a boil over medium heat.

  3. Simmer this mixture for 3-4 minutes until the berries release their juice and the berries are soft, but still holding their shape. Let this mixture cool.

  4. In a stand mixer or with a hand mixer whip the heavy cream with 1/2 cup sugar until doubled in volume and peaks form. Add in the vanilla.

  5. Fold in the vanilla Greek Yogurt to the whipped cream until well combined.

  6. In dessert glasses, layer the whipped cream mixture with the berry syrup mixture alternating two times until you’ve filled your glasses. Top with one-two fresh blackberries and some of the syrup sauce. Garnish each dessert with a sprig of fresh mint. Serve chilled.
