Crock Pot Bacon Cheese Ranch Potatoes

Put your slow cooker to work with these delicious potatoes. The best part is the easy cleanup when you line your slow cooker with tinfoil.

Ingredients
  • 3 pounds red potatoes quartered
  • 6 slices of bacon cooked
  • 2 cups cheddar cheese grated
  • 1/2 cup onion diced fine
  • 2 tablespoon dry ranch dressing mix (+ more to taste)
  • 2 tablespoons chives diced fine
Instructions
  1. Line a crock pot with tinfoil, leaving a little overhang to wrap the potatoes on top, and spray with nonstick spray.
  2. In a glass bowl mix the potatoes with the dry ranch dressing mix and the diced onions.
  3. Start to layer the potatoes into the crock pot. Place a layer of the potatoes into the bottom of the crock pot. Top the potatoes with cheese and crumbled bacon. Add two more layers of the potatoes with bacon crumbles and grated cheese, reserving 1/2 cup of the cheese.
  4. Cover potatoes with the tinfoil overhang. Cover with the lid and cook on low heat for 7-8 hours or high heat for 3-4 hours. Sprinkle with the remaining 1/2 cup cheese. and cook until melted, about 2 minutes
  5. Serve immediately and garnish with the chives.
