Grilled chicken in the summer is the best and these Summer Chicken Tacos are so good!
We love to grill in the Summer, and chicken is always a hit with everyone at my house. One of our most popular recipes is the 4 ingredient chicken marinade, but this chicken marinade for Summer chicken tacos is also one of our favorites! My sister Becky shared this recipe with us a few years ago, and it’s a keeper. Any chance to be outside and warm up the grill when the weather is nice, is the best! Serve these with cabbage, cheese, pico de gallo or our favorite homemade salsa, and lots of cilantro, for the perfect Taco Night.
This is also a great way to feed a crowd if you decide to have a small group of friends and family over or if you are having a big summer bash for your friends, family and neighbors. You can marinate and grill up the chicken earlier in the day before your guests arrive, slice it up and throw it in your slow cooker on the warm setting and everyone can enjoy these summer chicken tacos as soon as they arrive, set it up as a taco bar for everyone to enjoy.
What is Needed to Make Chicken Tacos?
- 8 – 12 boneless skinless chicken breast
- 1 cup of fresh lime juice
- 1 cup of white vinegar
- 1 cup of canola oil
- 1 cup of soy sauce
- 1/2 cup of worcestershire sauce
- 1 tablespoon of salt
- 1/2 tablespoon of pepper
- 1 tablespoon of Lawry’s season salt
- 2 teaspoons of garlic powder
- 1 tablespoon of sesame seeds
- 1 dash of onion powder
- Tortillas of your choice
- Fixings of your choice (lettuce, tomatoes, guacamole, cheese, etc)
How Long to Marinate Chicken?
If you are short on time, you need to let the chicken marinate for at least 30 minutes, max time: overnight. Poultry CAN marinate for up to two days in the fridge, but I wouldn’t recommend it. If there is soy sauce in the marinade (which this one does), you will want to avoid marinating for too long, because it can discolor the uncooked chicken before cooking.
How To Make Grilled Chicken Tacos?
- Mix all ingredients together to create a marinade
- Marinate chicken 1 hour or overnight at the most
- Grill the chicken for 6 minutes on one side and do not move it, then flip it over to the other side for another 5 minutes. Remove from the grill and let it rest for a few minutes.
- Slice up the chicken breasts and serve it on your favorite tortilla with all the fixings. Enjoy!

Should chicken be room temperature before grilling? Before grilling chicken you should let it come to room temperature. Meats that are room temperature cook more evenly and less juices run out which means a more juicier tender meat.
What is the best way to marinate chicken? You can marinate your chicken as soon as it is defrosted and still cold but you should try marinating your chicken at room temperature, the marinade absorbs quicker when you do it at room temperature.
What is the best temperature to grill chicken on? If you have a gas grill you should preheat your grill to 350-400 degrees (medium high heat). If you have a charcoal grill then the best way to gauge temperature would be to use a meat thermometer and cook your chicken until the internal temperature is at 165 degrees F.

Ingredients
