Shredded Sweet Pork

We love this copycat recipe for Cafe Rio's Sweet Pork.

Ingredients
  • 3-5 pounds pork roast
  • 2 tablespoons taco seasoning (or 1 packet)
  • 1 can Coke (1 can of root beer works too)
  • 1 cup brown sugar
  • 1 cup green salsa
Instructions
  1. Cut the roast into large chunks of pork.
  2. Rub the dry taco seasoning all over the pork roast.

  3. Place the seasoned pork roast into the slow cooker.
  4. Add the full can of coke, brown sugar and green salsa. Stir to combine.

  5. Cook on low for 8-9 hours or on high for 5-6 hours.
  6. Move the cooked pork to a cutting board to shred. Shred with forks and remove any excess fat.

  7. Add the cooked shredded pork back into the slow cooker to keep it moist with all the juices.
  8. Keep warm in the slow cooker until time to serve.
  9. Enjoy on tacos, salads, burritos, burrito bowls or our favorite: Sweet Pork Enchiladas.
