How to make a classic Cobb Salad.

  • 2 chicken breasts sliced or chopped (grilled or roasted chicken from a Rotisserie Chicken
  • 6 bacon slices cooked until crisp and chopped
  • 3-4 hard boiled egg sliced or chopped
  • 2 large avocados sliced
  • 2-4oz. blue cheese crumbles or gorgonzola cheese
  • 6-8 cherry tomatoes sliced in half
  • 2 heads green leaf lettuce chopped (like romaine, ice berg, green leaf or red leaf lettuce)
  • 1/4 red onion sliced very thin
  • 2 tablespoons flat leaf parsley *optional garnish
  1. Make the salad dressing if making homemade. We love this homemade ranch dressing recipe.

  2. Prepare the greens. Chop, wash and chill all the lettuce for the salad. We love to store the lettuce in the salad spinner after all the water is removed. It works like a crisper in the fridge.

  3. Layer on the ingredients: Add the chilled chopped lettuce first. Arrange the chopped chicken, blue cheese crumbles, sliced hard boiled egg, crumbled bacon, avocado and tomatoes. Sprinkle with a garnish of finely diced flat leaf parsley.

  4. Toss and Serve: In a large bowl, toss each serving with the dressing before serving. Use kitchen shears to chop things up even smaller if preferred.
