Chilaquiles Rojos

A flavorful Mexican breakfast packed with tortilla chips in a red sauce.

Ingredients
  • 10 tortilla chips
  • 1 28 oz can whole tomatoes drained
  • 1 jalapeno seeded
  • 1/2 medium white onion roughly chopped
  • 2 gloves garlic peeled
  • 1/4 tsp cumin
  • 1 tbsp vegetable oil
  • 1 cup low sodium chicken broth
  • 1/2 tsp salt optional
Instructions
  1. Preheat oven to 350 degrees.

  2. Place tortilla chips in a 13x9 baking dish in a single layer, spray lightly with oil and bake for 15 minutes

  3. Combine all other ingredients  (except chicken broth, tortilla chips and salt if chips are already salted) in a blender or food processor until smooth.

  4. Place the blended sauce in a skillet and cook on medium high heat for 5 minutes, stirring frequently.

  5. Reduce heat to low and add the chicken broth.

  6. Place tortilla chips in the sauce and simmer for 5 mins or until chips have softened.

  7. Serve on its own or with toppings of choice and Enjoy!

Recipe Notes

Salt can be omitted due to tortilla chips already having salt on them.
