Beef Queso Dip

Cheesy Queso dip made with ground beef and velveeta cheese.

Ingredients
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • salt and pepper to taste
  • 1 32oz. box VELVEETA® cheese cubed
  • 1/2 cup Monterey Jack cheese grated
  • 1 10oz. can diced tomatoes with green chiles (Rotel brand - MILD heat)
  • 1 7oz. can whole green chiles chopped
  • 1/4 cup salsa verde
  • 2 tablespoons fresh cilantro leaves chopped
Instructions
  1. Heat olive oil in a frying pan over medium high heat. Add ground beef, chili powder, cumin, salt and pepper, to taste.

  2. Cook the ground beef until browned, about 3-5 minutes, crumble the beef as it cooks; move cooked browned beef to a plate lined with a paper towel to drain excess fat and transfer to a plate.
  3. Add the cubed Velveeta cheese to the pan, stirring until melted. Stir in Monterey Jack cheese, diced tomatoes, green chiles and salsa verde until well combined.
  4. Stir the cooked ground beef and cilantro into the mixture until heated through, about 1-2 minutes.
  5. Move to a serving dish and serve immediately.
Recipe Notes

Can be served in a slow cooker set to the warm setting.

Serve with chips.
