Rice a Roni Chicken Casserole

Easy Rice a Roni Chicken Casserole perfect for weeknight dinners.

  • 1 6.9oz box Rice-A-Roni Chicken Flavor, prepared
  • 2 cooked chicken breasts (from a rotisserie chicken) shredded and chopped
  • 1 jar marinated artichoke hearts
  • 1 stalk celery diced
  • 1 green onion finely diced
  • 1/2 green bell pepper diced
  • 1/2 cup mayonnaise
  • 1 cup grated cheddar cheese blend
  1. Preheat oven to 350 F.
  2. Cook the rice-a-roni as directed on the box.
  3. In a large bowl add all the ingredients except for the grated cheese.
  4. Mix all ingredients together. The mayo helps to combine it all together.
  5. Move mixture into a greased 9x9 glass baking dish. Top with grated cheese.

  6. Bake for 30 minutes until the cheese is melted and the casserole is warmed through.
