Easy Mexican Rice

A quick dish your family will ask for over and over!

  • 1 1/2 cups white rice
  • 2 cups chicken broth or water
  • 1 can Mild Rotel
  • salt to taste
  1. Blend one can of Mild Rotel. You can use regular Rotel if you like it more spicy…we prefer the Mild Rotel. Blend with a regular blender or an immersion blender.
  2. Rinse the rice and add it to the inner pot of your rice steamer, along with the chicken broth (or water). Add in the blended Rotel Sauce. Give it a stir to combine. Close the lid. Set the rice steamer to white rice. Let it steam until ready.
  3. When finished fluff the rice with a fork. Season with more salt to taste if desired. Serve warm.
