Roasted Brussels Sprouts with bacon and parmesan cheese

Take your Brussels Sprouts to the next level by roasting at a high heat in the oven. Serve them with bacon parmesan cheese and drizzle with a warm bacon honey dijon sauce

Ingredients
  • 2 lbs. Brussels Sprouts ends trimmed off and cut in half lengthwise
  • 4 strips bacon cooked and crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup parmesan cheese grated
  • 1-2 tablespoons olive oil
FOR THE SAUCE
  • 2 tablespoons bacon fat reserved from cooking the bacon
  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
Instructions
  1. Preheat oven to 400F.
  2. Toss prepared Brussels Sprouts with Parmesan cheese, salt, pepper and oil. Toss until well coated in the oil.

  3. Spread out onto a tinfoil lined sheet pan (the foil is for easy cleanup).
  4. Roast for 20 minutes. Take out to flip over and then move back into the oven for another 10 minutes or so until you start to see some crispy pieces. Do not let them burn.

  5. While the Brussels Sprouts are roasting in the oven make the sauce. In the pan where you cooked the bacon. Remove and drain all bacon fat out into a glass jar. Spoon in two tablespoons bacon fat, back into the pan. Turn the heat back on under the pan to medium high. Add the honey and dijon mustard and stir until the sauce is well combined.

  6. Toss Brussels Sprouts with bacon and drizzle with the warm bacon honey dijon sauce.
  7. Serve warm.
