Loaded Bacon Mushroom Swiss Green Salad

Leafy greens, mushrooms, salty bacon crumbles, and Swiss cheese come together in this salad that is packed with flavor. The homemade poppyseed dressing is the perfect sweet addition to toss it all together.

  • 1 head romaine lettuce chopped
  • 1 small package spinach or spring mix lettuce chopped
  • 1 small package bacon bits
  • 1 8oz. package mushrooms sliced
  • 1 small package Swiss cheese cubed
  • 1/4 red onion sliced thin
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
For the Poppy Seed Dressing:
  • 1/4 cup oil
  • 1/4 cup red wine vinegar
  • 1/4 cup sugar
  • 1 tsp. dry mustard
  • 1 tbsp grated onion
  • 1 tbsp poppy seeds
  1. Layer all salad ingredients together and keep chilled in a big bowl until ready to toss and serve.

  2. To make the homemade poppyseed dressing, mix all salad dressing ingredients together until creamy. Add dressing to the salad right before serving. Enjoy!
