Mini Open Faced Reuben Sandwiches


  • rye bread sliced into fourths
  • corned beef cooked, shredded
  • thousand island dressing
  • sauerkraut from a can, drained
  • Swiss cheese thinly sliced


  1. Spread a layer of thousand island dressing on one side of the rye bread.
  2. Top with shredded corned beef, sauerkraut and thinly sliced Swiss cheese.

Recipe Notes

Serve them as is or stick them under the broiler for a minute or two to melt the cheese. Either way, these little open faced sandwiches are so good.
