Potato Soup

Warm, creamy comfort...we love this simple potato soup recipe.

Ingredients
  • 10 unpeeled red potatoes cubed
  • 2 tablespoons butter
  • 1 onion chopped
  • 2 stalks celery diced
  • 1 can chicken broth
  • 1 can water
  • 1 tablespoon chicken soup base
  • 1 pinch cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup half and half (cream and whole milk)
  • 1 can condensed cream of mushroom soup strain out the mushrooms
Instructions
  1. In a large stock pot add butter and the diced onion and celery and sauté until the onions are translucent.

  2. Add in the potatoes, chicken broth, water, soup base, salt and pepper. Bring to a boil and simmer on medium heat until potatoes are tender.

  3. Put ½ the potato mixture in the blender and puree. Stir back into soup. (This will thicken the soup.)

  4. Add half and half, cream of mushroom soup and stir until creamy. Add a pinch of cayenne pepper and adjust seasonings as desired.

Recipe Notes

*Optional Garnish: grated cheddar cheese and cooked bacon crumbles.
