Red Beans and Rice... pure comfort food with so much flavor!

  • 2 cans red kidney beans drained and rinsed
  • 1 turkey sausage sliced
  • 1/2 teaspoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 can chicken stock
For the Rice
  • 1 cup rice rinsed
  • 2 cups water
  1. Rinse your rice then steam with the water in a rice steamer or a covered pot.

  2. Slice the turkey sausage into 1/2 inch slices. Sauté the turkey sausage in a pan on medium high heat until you start to see browning on both sides.

  3. Add one can of the beans into the pan where you sautéed the sausage. With an immersion blender, puree the beans with the chicken stock, onion and garlic powders, salt and sugar until smooth.

  4. Now add in the second can of rinsed beans. Let it come to a boil. Simmer for 20 minutes.

  5. Serve over the steamed rice layered with the bean mixture and topped with the turkey sausage. You can also mix the sausage into the beans.
