Tasty gluten free Sweet Potato Sliders with Homemade Ketchup
In a saucepan on medium high heat, bring all ingredients to a boil whisk together until well combined and simmer for 20 minutes, stirring ever so often. The sauce will thicken and the flavors will blend.
Remove from the heat and let it cool to room temperature. Once cooled, you can transfer to a small jar and keep in the fridge up to two weeks, or freeze it in ice cube trays and use it when you need it.
Preheat oven to 350 F.
Line a sheet pan with parchment or foil. Place the sliced rounds of sweet potato onto the sheet pan. Rub coconut oil on both sides of each slice. Bake for 30 minutes.
Make the burgers: Fry up the burger patties on the grill or in a skillet on your cooktop.
Assemble the burgers: Add mayo, the homemade ketchup to the inside of each bun. Layer the cooked burger, avocado and any additional condiments or toppings you like. Serve Warm.
