Cap'n Crunch cereal makes the best coating for chicken strips.

Ingredients
  • 1-2 Chicken Breasts cut into chicken tender or nugget sized pieces.
  • 1-2 cups Cap'n Crunch cereal
  • 2 eggs for an egg wash
  • 1 cup flour
  • black pepper for seasoning the flour
  • garlic powder for seasoning the flour
Instructions
  1. Cut up your chicken to desired sizes, kitchen shears help to make the job go quick!

  2. Blend your cereal into crumbs in your food processor or blender. Place cereal crumbs into a shallow glass pie plate to prepare for breading.

  3. In a wide frying pan use a small amount of oil to fry the chicken strips. Start to heat the oil in your frying pan. Choose an oil that is good under high heat...canola works great.
  4. Prepare all three dipping plates for the chicken. 1-the seasoned flour 2-the egg wash 3-the Cap'n Crunch crumbs. Dip the chicken into the three separate mixtures: the seasoned flour, then move onto the egg wash, and finally the cereal crumbs.

  5. Check the oil to see if it's hot enough before you begin. Test it with a little bit of the flour mixture. If the oil sizzles, it's ready. Place in your shallow pan to fry and cook the chicken for 2-3 minutes each side, until they are crisp and golden.

  6. Place the cooked chicken tenders on a cooling rack with paper towels underneath to catch excess oil. This also stops the breading from getting sticky from sitting to the paper towels.
