Gluten Free Chicken Nuggets

  • boneless skinless chicken breasts
  • almond flour/almond meal
  • salt & pepper
  • smoked paprika optional
  • extra virgin olive oil or coconut oil
  1. Trim any excess fat and skin off the chicken, even though you might have bought skinless & boneless chicken breasts, sometimes things get missed and it's always a good idea to clean them up as much as possible.
  2. Slice the chicken breasts into good sized nuggets or chicken strips.
  3. Season the chicken with salt, pepper and smoked paprika (optional). Roll the uncooked chicken in the almond flour/almond meal until well coated. Gently shake off excess.
  4. Now you can either pan sear them in the oil on medium high heat, browning them on both sides for about 6-8 minutes each (depending on thickness). Or you can bake them all for 30 minutes in the oven at 350. If you chose the oven method, cover your pan with tinfoil for easy clean up. Add the oil all over the baking pan, before baking.
  5. Turn the nuggets over half way through the bake time.
