Bron Grate Cookie recipe

Bron Grate is a Norwegian cookie similar to a snickerdoodle with the sugar on the outside of the cookie.

Ingredients
  • 1 cup butter softened (two sticks)
  • 1 cup sugar
  • 2 tablespoons sugar
  • pinch salt
  • 1 egg separated
  • 2 teaspoons baking soda
  • 1 tablespoon molasses
  • 1 tablespoon cinnamon
  • 2 cups flour
Instructions
  1. Preheat oven to 350.
  2. In a stand mixer, cream the butter and sugar together.
  3. Dissolve the baking soda into the egg yolk. Add the egg yolk, baking soda mixture, cinnamon and molasses to the butter and sugar.
  4. Gradually add in flour until well combined.
  5. Using an ice cream scoop, scoop out the cookie dough. Gently roll the ball of cookie dough in the unbeaten egg white and then roll in a plate of the extra sugar plus a pinch of salt. Continue this process until you have filled one cookie sheet with 12. Bake for 13 minutes.
  6. Let cool on the cookie sheet they baked on covered with parchment paper and a hand towel. Recipe makes 2 dozen cookies.
Recipe Notes

Notes - I baked these on a silpat. You could also bake them on parchment sheets, but I have heard that cookies tend to spread less on a silpat, so this is what I prefer to bake on for this recipe.
