Using a brownie box mix, mix brownie batter as directed.
-
Spray plenty of non-stick spray in each compartment of your mini muffin pan to stop the brownies from sticking in the pan. You can also use mini cupcake liners, but be sure to spray those too. Using a small scooper or spoon, fill the mini muffin tin 2/3 way full with brownie batter. Bake for 15 minutes at 350.
-
Let cool completely before trying to remove from the muffin pan. While the brownie bites are cooling, you can prepare the peppermint cream cheese frosting.Once the brownie bites are removed from the pan, place on a platter or on a cooling rack.
-
Mix the butter, cream cheese, mint extract, vanilla extract and powdered sugar together in your mixer until you reach a desired consistency for the frosting. Using a wide tip, insert the tip into a ziploc bag or a frosting bag and get ready to put the frosting on your brownie bites.

Lastly, place a Hershey's candy cane kiss on the top for the finishing touch.
