Put that delicious shredded sweet pork to good use in these sweet pork enchiladas.
For the enchilada sauce blend one can of: diced tomatoes with sweet chilies (like Rotel). We like the mild Rotel. Spread a layer of the sauce on the bottom of the baking dish.
Using your tortilla of choice, add big spoonfuls of the cilantro lime rice, the shredded sweet pork and grated cheese. Roll each tortilla up and continue on with the next enchilada until you fill the baking dish.
Bake at 350 for 30 minutes until hot and bubbly and the cheese is melted.
Serve with fresh tomatoes, lettuce and sour cream.
