Chicken Fried Rice

  • 2 cups rice cooked...preferably a day old
  • 1 to 2 chicken breasts from a rotisserie chicken shredded
  • 1/2 cup soy sauce divided
  • 2 eggs scrambled
  • 1/4 cup heavy cream
  • 1 cup chicken stock
  • 2 carrots diced
  • 1 cup frozen peas
  • 1 green onion finely diced
  • 1/4 cup butter divided
  • 1/2 teaspoon garlic minced
  1. In a small bowl pour half of the soy sauce over the chicken to marinate the chicken for a minute.
  2. With a hand mixer, blend the eggs and cream together to make full fluffy scrambled eggs.
  3. In a large frying pan on medium heat add half the butter and the blended eggs, cook and scramble the eggs. Remove the eggs from the pan and set aside.
  4. On medium heat add the carrots and the chicken stock. Simmer carrots until softened.
  5. Add in the marinated chicken and the rice, and remaining soy sauce, mixing it all around.
  6. Add the remaining butter, garlic and frozen peas.
  7. Mix all together well, add more soy sauce if desired, garnish with green onion and Enjoy.
