Lucky Charms Rice Krispie Treats

Rice Krispie Treats with a fun twist for a rainbow party or for St. Patrick's Day.

Ingredients
  • 1/2 stick of butter 1/4 cup of butter
  • 1/2 box Rice Krispies cereal
  • 1 1/2 bag mini marshmallows
  • 1 box Lucky Charms marshmallows only
Instructions
  1. Before starting, if you want to make a rainbow design with the Lucky Charm marshmallows, it’s helpful to line the marshmallows up in rows of the same color before you start making the treats, so it’s easy to add them at the end quickly while the treats are still warm.

  2. Butter the dish or sheet pan where you will spread out the treats.

  3. Melt the 1/2 stick of butter in a big pot on your stovetop.
  4. Add in the mini marshmallows and continue stirring as they start to melt.
  5. The consistency of the marshmallows should still be lumpy when the cereal goes into the pot.
  6. Dump in the rice krispie cereal (don’t measure), continue stirring until well mixed together.

  7. Transfer the treats to your buttered dish.
  8. Butter your (clean) fingers to pat the warm treats down into the pan. Or use a piece of parchment between the treats and your hands to gently press the treats into the pan.

  9. While the treats are still warm, line up the rainbow colored crunchy marshmallows in rows on the tops of your treats. Place a piece of parchment paper over the top and gently press down on the marshmallows to help them stick into the top of the treats.

  10. Butter your knife to cut the treats into squares or rectangles.
  11. Cut the treats while they’re still warm.
  12. Wrap them in plastic wrap to keep them fresh or enjoy right away.
