Cheddar Bacon Biscuits

Savory, buttery, flaky biscuits with cheddar cheese and bacon.

Ingredients
  • 6 slices bacon* diced
  • 4 cups all purpose flour
  • 1 cup sharp cheddar cheese grated
  • 1/4 cup fresh flat leaf Italian parsley leaves chopped
  • 4 tsp baking powder
  • 1/2 tsp black pepper
  • 1 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 tsp garlic powder
  • 3/4 cups unsalted butter frozen
  • 1 3/4 cups buttermilk
Instructions
  1. Preheat oven to 450 degrees F. Line a baking sheet with
    parchment paper.

  2. Heat a large skillet over medium high heat. Add bacon and cook until crisp, about
    6-8 minutes. Move the cooked bacon to a paper towel-lined plate.

  3. In a large bowl, combine flour, baking powder, pepper, salt, baking soda, garlic
    powder, cheddar cheese and cooked bacon.

  4. Grate the frozen butter using the large holes on a box grater. Stir the butter into
    the flour mixture.

  5. Add buttermilk and stir with a rubber spatula until a soft dough forms.

  6. Working on a lightly floured surface, knead the dough 3-4 times until it comes
    together. With a rolling pin, roll the dough into a 1 1/4-inch thick rectangle.
    With a 2 inch biscuit or cookie cutter cut out 14-16 round biscuits. Place
    biscuits onto the baking sheet; place in the freezer for 10-15 minutes.

  7. Remove biscuits from freezer and bake for 14-17 minutes, or until golden brown. Serve warm.

Recipe Notes

*We love to use precooked bacon as a short cut in this recipeā€¦about 1/2 cup cooked crumbled bacon.
