Russian Cream Dessert

A tangy and rich berries and cream dessert.

  • 3 cups heavy whipping cream
  • 1 1/3 cups (10 ounces) granulated sugar
  • pinch of salt
  • 1 tbs gelatin
  • 1 cup boiling water
  • 1 1/2 cups (12 ounces) sour cream
  • 1 tbs pure vanilla extract


  1. In a medium sized saucepan, heat the cream, sugar and salt over medium heat until
    the sugar dissolves, stirring constantly for about 4-5 minutes. Keep the heat
    to a gentle simmer. Remove from the heat and set pan aside.

  2. Dissolve the gelatin completely in 1 cup boiling water and whisk it into the warm cream
    mixture. Let this mixture cool in the fridge for 30 minutes.

  3. Whisk in the sour cream and vanilla into the cooled cream mixture until smooth.

  4. Spoon mixture into individual serving dishes (about a cup per serving)

  5. Refrigerate for at least 4 hours and up to 24 hours

  6. When ready to serve top with fresh berries and serve chilled.
