Pink peppermint ice cream bars are such a simple way to celebrate seasonal peppermint ice cream!
While the ice cream softens, crumb the JoJo cookies in a food processor. OR put in a gallon sized bag and crush with a rolling pin until it is in crumb form.
Spread the cookie mixture into the bottom of a parchment lined 9x9 dish. Use a spoon to compact the mixture to create a crust.
Put the dish into the freezer to let the ice cream harden back up for 2+ hours or overnight.
Remove from freezer, cut into squares and immediately serve with a drizzle of chocolate syrup if desired.
