Mini Cheese Quesadillas

Serve up a big batch of mini cheese and green chile quesadillas at your next party!

Ingredients
  • 2 packages street taco sized flour tortillas
  • 4 cups grated cheddar cheese or Mexican blend grated cheese
  • 1 jar Salsa Verde we like Trader Joes or La Victoria brand
  • 1 stick butter
  • 1/2 teaspoon sea salt
Instructions
  1. Preheat your oven to 425.

  2. In a large bowl combine the grated cheese with 1/4-1/2 jar of the salsa verde (more or less depending on your preference).

  3. Line two sheet pans with tinfoil.

  4. Grease the foil with the stick of butter. Sprinkle the sea salt onto the buttered foil.

  5. Each mini flour tortilla has a plain side and a side with grilled type marks. Rub butter on the grilled looking side and place that side down onto the sheet pan. You should be able to fit 6 small tortillas onto each sheet pan. Repeat this step until you have the first 12 tortillas buttered side down ready to assemble.

  6. Place a little more than a tablespoon size amount of the cheese salsa mixture onto the center of each flour tortilla.

  7. Bake for 5 minutes or until the cheese is melted.

  8. Take the pan out of the oven and gently fold each little quesadilla in half, gently pressing the sides together.

  9. Gently move the foil with the quesadillas on it, off of the sheet pan so you can repeat with the second batch of 12 tortillas.

  10. Serve warm.
Recipe Notes

Make these a day head: allow them to cool and then refrigerate until planning to serve.
 To reheat, place all quesadillas on a foil lined sheet pan in a single layer and bake at 350F for 5 minutes until warmed.

You can cut each mini quesadilla in half to serve: 48 quesadilla triangles.
