Easy Mint Brownies

The easiest mint brownies you'll ever make! 

Ingredients
For the Brownies:
  • 2 sticks unsalted butter room temperature
  • 2 cups sugar
  • 4 eggs
  • 2 cups flour
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
For the Mint Topping:
  • 1 package Andes Mint chocolate bars unwrapped
Instructions
  1. Preheat oven to 350 F.

  2. In a large bowl mix all the brownie ingredients together until combined well.

  3. Bake for 30 minutes or until a wooden skewer comes out clean after inserted in the center of the brownie pan.

  4. While the brownies are cooling, place rows of unwrapped Andes mints on top of the brownies. The mints will begin to melt from the heat of the brownies. Once mostly melted, use a butter knife to spread the melted Andes Mints all over the top of the brownies.

  5. Let the brownies continue to cool in the pan and the Andes Mints will harden back up. When cool you can cut through the brownies. Enjoy!
