Sweet Corn and Pepper Chowder

We love this corn chowder year round, but especially when fresh corn is in season...it's the best!

Ingredients
  • 1 teaspoon olive oil
  • 1 cup onion chopped
  • 1 cup red pepper diced
  • 1 tablespoon flour +2 teaspoons more
  • ½ teaspoon cumin
  • 1/8 teaspoon ground red pepper
  • ½ pound round red potatoes peeled and cubed (about 1 ¼ Cups)
  • 2 cups water
  • 1 teaspoon chicken flavored bouillon
  • 2 cups fresh or frozen sweet corn thawed
  • 2 tablespoons canned green chiles chopped and drained
  • 1 cup evaporated skim milk
  • ¼ teaspoon black pepper
Instructions
  1. Coat a large dutch oven with cooking spray. Add oil, and place over medium-high heat until hot.

  2. Add onion and pepper and sauté 5 minutes, stirring frequently.
  3. Stir in flour, cumin and ground red pepper, if desired; cook for 1 minute.
  4. Add potatoes, water and bouillon; bring to a boil, stirring frequently. Cover, reduce heat and simmer 10 minutes or until potatoes are tender and liquid is thickened.
  5. Add corn and remaining ingredients; bring mixture to a boil over medium heat. Serve warm.
