Pepper Steak Stir Fry

Pepper Steak Stir Fry with thin sliced steak cooked with green bell peppers in a savory sauce. A great weeknight meal that tastes like take out.

Ingredients
  • 2 sirloin, flank or round steak cut into thin strips
  • 1/4 cup vegetable oil
  • 2 cups beef broth
  • 1- teaspoon sugar
  • ½ teaspoon ginger
  • 2 teaspoons soy sauce
  • 4 teaspoons cornstarch
  • 4 tablespoons water
  • 2 green peppers cut into strips
  • 4 tomatoes cut into wedges
  • 1 medium onion sliced
Instructions
  1. Brown the steak in hot oil in a heavy skillet. (If using round steak simmer with a little water for about an hour to tenderize it.)

  2. Add beef broth, sugar, ginger and soy sauce. Bring to a boil, reduce heat and simmer for 15 minutes.
  3. Add the vegetables. Cook for 15 more minutes.

  4. Stir 4 teaspoons cornstarch and 4 tablespoons water into a smooth paste. Add slowly to the beef mixture. Cook and stir until mixture thickens and boils. Serve over steamed rice.
