Chicken Satay with Peanut Dipping Sauce

This is one of our go to appetizers for entertaining. It's great during the holidays.

Ingredients
For the chicken:
  • 2 chicken breasts boneless skinless
  • 1 bottle Ginger Sesame Dressing Marzetti Brand preferred
  • 1 package wooden skewers
For the Peanut Dipping Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup hot water
  • 1 tablespoon soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons Asian chili sauce
  • 1 tablespoon dark brown sugar
  • 1 garlic clove minced
  • 1 tablespoon fresh cilantro chopped
  • 2 green onions minced
Instructions
For the chicken:
  1. Soak wooden skewers in a pan of water.

  2. Pound flat two chicken breasts.

  3. Once pounded flat, slice the chicken breasts into thin strips.

  4. Place the uncooked chicken strips into a bowl and pour about half the bottle of dressing into a bowl to marinate the chicken for 30 minutes to one hour.

  5. Weave the chicken strips onto wooden skewers.

  6. Place all the skewers onto a wire cooling rack over a lined baking sheet. Covering the wooden skewer ends with tinfoil while they are under the broiler.

  7. Place this baking sheet under the broiler of your oven set to low for 6 - 7 minutes flipping and rotating the skewers half way through, until the chicken is cooked and browned on all sides.

  8. Serve with the peanut dipping sauce.

For the Peanut Dipping Sauce:
  1. Whisk the peanut butter and the hot water together in a medium bowl.

  2. Stir in the remaining ingredients.Transfer to a smaller bowl.

Recipe Notes

When pounding chicken flat, I like to use an old (wiped out) plastic bag from a cereal box. The plastic on those bags is indestructible, and it doesn't break easily.
