Buttermilk Banana Bread Bars

Soft melt in your mouth banana bread bars with a sweet butter cream frosting.

Ingredients
For the Bars
  • 1 1/2 cups sugar
  • 1 cup buttermilk
  • 1/2 cup butter softened
  • 2 eggs
  • 1 3/4 cups 3 or 4 ripe bananas, mashed
  • 2 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 3/4 tsp salt
For the Frosting
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1 1/2 tsp vanilla
  • 3 Tbsp milk
Instructions
For the Bars
  1. Preheat oven to 375 F.
  2. Butter and line with parchment a 18x13 sheet pan.
  3. For the bars: Beat together softened butter, sugar, buttermilk and eggs until creamy.
  4. Blend in soft over ripe bananas and vanilla.
  5. Add flour, baking soda, salt, and blend for 1 minute.
  6. Spread batter evenly into pan.
  7. Bake 20 to 25 minutes or until golden brown.
For the Frosting
  1. In a large saucepan, heat butter over medium heat until boiling. Allow the butter to turn a golden brown color, then remove from heat immediately.

  2. Add powdered sugar, vanilla and milk. Whisk together until smooth. Using a spatula, spread the frosting over the warm bars.
  3. The frosting will be easier to spread while the bars are still warm. Enjoy!
Recipe Notes

The frosting will be thicker than a glaze. To help smooth the frosting over the bars, use a small cookie scoop, and scoop the frosting all over the top of the bars. Place the sheet pan back into the warm oven (which has now been turned off, but still warm from baking). This allows the frosting to melt slightly, making it easier to spread over the bars.
